Sirloin steak with blue cheese, balsamic Brussels and horseradish mash recipe

Molten blue cheese elevates sirloin steaks to a luxurious meal for two while balsamic Brussel sprouts and horseradish mash are the ultimate accompaniments. That's dinner for a date night sorted!

Ingredients
- 2-pack Tesco Finest 30-day matured beef sirloin steaks
- 2 tsp olive oil
- 15g butter
- 2 sprigs fresh thyme
- 1 garlic clove, bashed with the flat of the knife
- 2 rashers Tesco Finest smoked dry cure streaky bacon, chopped
- 180g peeled baby sprouts, halved
- 50g frozen or fresh cranberries
- 1 tbsp balsamic vinegar
- 425g pack mashed potato
- splash of milk
- 1 tbsp horseradish sauce
- 50g Stilton, to crumble over

Method
- Remove the steaks from the fridge at least 10 mins before cooking. Rub with 1 tsp oil and season. Heat a frying pan over a medium-high heat and add the steaks. Cook for 1 min, then add the butter, thyme and garlic clove. For medium steaks, cook for 2 mins each side, turning once. Remove the steaks to a board or plate to rest and cover with foil.
- For the sprouts, heat the remaining 1 tsp oil in a large frying pan. Cook the bacon over a medium heat for 2-3 mins until beginning to crisp up. Add the sprouts and cook for 4-5 mins, stirring regularly, until starting to colour. Add the cranberries and balsamic vinegar, season with black pepper, and cook for 2 mins or until the cranberries have softened.
- Tip the mash into a saucepan along with a splash of milk and warm over a low heat for 2-3 mins until heated through. Season with black pepper and stir through the horseradish sauce.
- Divide the mash and sprouts between plates along with a steak. Crumble the Stilton over the steaks and drizzle with any remaining juices before serving.
