Spicy glazed chicken with a curry salad dressing

You can rustle up this tasty chicken dish using the ingredients from a classic chicken curry – perfect for a quick and easy midweek meal.

    Ingredients

    • 50g butter, melted
    • 2 tbsp clear honey
    • 2 tsp mild mustard
    • 2 tsp ground turmeric
    • 2 tsp ground cumin
    • 1 garlic clove, grated
    • 1 tsp grated fresh ginger
    • ½ tsp chilli flakes
    • 4 chicken breasts
    • mixed salad, to serve

    For the dressing

    • 4 tbsp Greek yogurt
    • 2 tbsp mango chutney

    For the sauce

    • 2 tsp mild curry powder
    • 1 lemon, juiced

    Method

    1. Preheat the oven to gas 6, 200°C, fan 180°C. Put the melted butter in a baking dish with the honey, mustard, turmeric, cumin, garlic, ginger and chilli flakes and add some salt and pepper to taste. Stir well.
    2. Make 3 slashes into the side of each chicken breast about 5mm (1/4in) deep, to allow the flavours to penetrate the meat. Add the chicken to the baking dish and turn to coat on all sides with the spicy mixture. Bake for 20-25 minutes, turning halfway, until the chicken is golden brown and cooked through with no pink meat remaining.
    3. Mix all the dressing ingredients together in a bowl and pour over a prepared salad to serve.
