Spiced peach and lime chutney recipe

This zesty peach and lime chutney is an easy way to try making your own preserves. Pair with cheese and crackers, cured meat platters or spoon alongside a leftover roast. Alternatively, package up and give to friends or family as an easy edible gift.

Ingredients
- 1.25kg peaches, chopped
- 3 limes, zested and juiced
- 1 onion, finely chopped
- 175g soft brown sugar
- 3 garlic cloves, finely chopped
- 1 tsp mixed spice
- ¼ tsp crushed chillies
- 1 x 350ml bottle white wine vinegar

Method
- Place the peaches in a large saucepan along with the lime zest, onion, sugar, garlic, mixed spice, chillies and 1 tsp salt.
- Juice the limes into a measuring jug and make up to 250ml with white wine vinegar.
- Add the liquid to the pan and heat, stirring gently, until the sugar has dissolved, then bring to the boil and simmer uncovered for about 1 hr, stirring occasionally, until thick. Immediately spoon into sterilised jars, seal and leave to cool.

Tip
To sterilise glass jars, wash in hot, soapy water and rinse well. Dry in the oven for 15-20 mins at gas 1, 140°C, fan 120°C until hot and completely dry. Boil metal lids and rubber seals for 10 mins, then leave to dry.
