Ingredients

  • 60ml rice wine vinegar
  • 60g caster sugar
  • 1½ tbsp fish sauce
  • 2 small crushed garlic cloves
  • ½-1 tsp crushed chillies (to taste)
  • ½ tbsp cornflour
  • prawn crackers (optional)

Method

  1. Put rice wine vinegar, caster sugar, fish sauce, garlic cloves, crushed chillies (to taste) and 2 tbsp water in a small saucepan. Bring to a boil over a medium-high heat. Reduce the heat and simmer for 10 mins until roughly reduced by half and slightly syrupy.
  2. In a small bowl, mix cornflour with 2 tbsp water. Add to the pan and simmer for 2-3 mins until thickened. Pour into a serving bowl and leave to cool before serving with prawn crackers, if you like.
