It’s a simple, quick weeknight dinner with quality ingredients that makes it feel a little bit fancy.’

Ingredients

  • 1 tbsp olive oil
  • 125g pack Tesco Finest shiitake mushrooms, larger mushrooms torn
  • 150g pack Tesco Finest exotic mixed mushrooms, larger mushrooms torn
  • 1 small onion, diced
  • 2 garlic cloves, thinly sliced
  • ½ tsp smoked paprika
  • 150g Tesco Finest reginette pasta
  • ½ vegetable stock cube, made up to 250ml
  • 200ml 50% less fat crème fraîche
  • 1½ tsp wholegrain mustard
  • 1 tsp cracked black pepper or freshly ground, plus extra to serve (optional)
  • handful flat-leaf parsley, finely chopped (optional)

Method

  1. Heat the oil in a frying pan on a medium-high heat, then add the mushrooms. Cook for about 8 mins or until golden-brown, stirring occasionally. Add the onion, stir and cook for 3 mins or until fragrant, then add the garlic and cook for 2 more mins. Stir in the smoked paprika.
  2. Meanwhile, bring a large saucepan of water to the boil and add the pasta. Cook until al dente – about 10-12 mins – then drain and set aside.
  3. Add the vegetable stock to the frying pan and turn up the heat to simmer for 3 mins or until reduced by a third.
  4. Turn down the heat to low and add the crème fraîche, mustard and black pepper. Stir until everything is combined.
  5. Add the cooked pasta to the frying pan and stir until all the pasta is coated in the sauce. Serve with a little extra black pepper and chopped parsley, if you like.
  • Tip: No shiitake mushrooms? This recipe will work just as well with button or chestnut instead.
