Smoky cheese pumpkin fondue recipe

Hosting a Halloween party this year? Meet your new centrepiece — an easy-prep yet epic fondue recipe. This may take a little while, but no special cooking skills are required, and the result is totally worth it. Scoop the baked pumpkin flesh and gooey smoky cheese onto chunks of crusty bread, apple slices and cornichons – yum.

Ingredients
- 2-3kg edible pumpkin
- 200g pack Tesco Finest extra mature oak smoked Cheddar, grated
- 195g pack Tesco Finest Swiss Emmental, grated
- 4 tsp cornflour
- 125g crème fraîche
- 3 tbsp brandy, white wine or apple juice
- 1 echalion shallot, finely chopped
- 3 Tesco Finest bake at home baguettes with sourdough (white or multigrain)
- 2 garlic cloves, halved
- 2 tbsp olive oil
- 2 apples, halved, cored and cut into chunky slices
- 340g jar cornichons, drained

Method
- Preheat the oven to gas 5, 190°C, fan 170°C. Cut a lid into the pumpkin; scoop out the seeds and strands. Season inside, replace the lid and roast for 50 mins-1 hr until tender. Discard any liquid from inside.
- Mix the cheeses with the cornfour in a bowl and stir well. Stir in the crème fraîche, brandy and shallot and spoon into the pumpkin. Cover with foil and roast for a further 20-30 mins until the cheese is melted and gooey. Stir well.
- Meanwhile, cut the baguettes into slices and arrange on baking trays. Rub with the cut sides of the garlic cloves, drizzle with oil and season with pepper. Bake alongside the fondue for the final 8 mins until crisp and golden.
- To eat, dip the bread, apple slices and cornichons into the fondue on long toasting forks or skewers.
