Smoked mackerel Caesar salad recipe

Swap chicken for omega-3 rich smoked mackerel in this tasty Caesar salad, perfect for a weekday lunch. Crunchy croutons, crisp romaine lettuce, salty Parmesan shavings and a creamy dressing add all the essential elements of a classic Caesar salad. You could also use any protein of your choice, such as hot smoked salmon or a boiled egg for a veggie version.

Ingredients
- 50g ciabatta, cut into 1cm cubes
- ½ tbsp olive oil
- ¼ tsp smoked paprika
- 1/4 tsp dried oregano
- 1/2 romaine lettuce heart
- 75g smoked mackerel, skinned and flaked
- 10g Parmesan shavings
- 40g Healthy Living Caesar dressing

Method
- Preheat the oven to gas 6, 200°C, fan 180°C. Mix the ciabatta cubes with the olive oil, paprika and oregano. Spread on a small tray and bake for 15 mins to crisp up. Cool, then put in a container.
- Break up the romaine lettuce into a lunchbox. Put the mackerel and Parmesan shavings on top.
- Put the Caesar dressing into a lidded pot. Mix everything together to serve.
- Cook's tip: For an optional snack you could take a few berries in a small container.
