Slow-cooker scandi spiced meatloaf recipe

Cooked low and slow, this Scandi-inspired slow-cooker meatloaf recipe uses both beef and pork mince, plus fatty bacon lardons to ensure a juicy, tender loaf. Cook on low for 6 hours and serve with butter-topped jackets and braised red cabbage.

Ingredients
- 1 tbsp olive oil
- 1 onion, chopped
- 1 large clove garlic
- 1 tsp allspice
- pinch ground cloves
- 1tbsp tomato puree
- 250g pork mince
- 250g beef mince
- 90g smoked bacon lardons
- 2tsp dijon mustard
- small bunch fresh parsley, leaves chopped
- small bunch dill, leaves chopped
- 1 large egg, lightly whisked
For the glaze
- 80g tomato ketchup
- 1 tbsp Worcestershire sauce
- ½tsp brown sugar

Method
- Preheat your slow-cooker on high (or according to manufacturers instructions). Heat the oil in a frying pan over a medium heat. Add the onion and sweat for 5 minutes. Add the garlic and spices and continue to fry for a couple more minutes.
- Spoon into a bowl and allow to cool. Add the remaining ingredients to the bowl. Season generously and add the egg. With clean hands scrunch to mix.
- Form into a loaf shape and place in the base of your slow-cooker. Mix the glaze ingredients together and spoon this over the top of the meatloaf.
- Cook on low for 6 hours (or according to manufacturers instructions). Serve warm from the-cooker with buttery jacket potatoes and braised red cabbage.
