Slow-cooker scandi spiced meatloaf

Cooked low and slow, this Scandi-inspired slow-cooker meatloaf recipe uses both beef and pork mince, plus fatty bacon lardons to ensure a juicy, tender loaf. Cook on low for 6 hours and serve with butter-topped jackets and braised red cabbage.

    Ingredients

    • 1 tbsp olive oil
    • 1 onion, chopped
    • 1 large clove garlic
    • 1 tsp allspice
    • pinch ground cloves
    • 1tbsp tomato puree
    • 250g pork mince
    • 250g beef mince
    • 90g smoked bacon lardons
    • 2tsp dijon mustard
    • small bunch fresh parsley, leaves chopped
    • small bunch dill, leaves chopped
    • 1 large egg, lightly whisked

    For the glaze

    • 80g tomato ketchup
    • 1 tbsp Worcestershire sauce
    • ½tsp brown sugar

    Method

    1. Preheat your slow-cooker on high (or according to manufacturers instructions). Heat the oil in a frying pan over a medium heat. Add the onion and sweat for 5 minutes. Add the garlic and spices and continue to fry for a couple more minutes.
    2. Spoon into a bowl and allow to cool. Add the remaining ingredients to the bowl. Season generously and add the egg. With clean hands scrunch to mix.
    3. Form into a loaf shape and place in the base of your slow-cooker. Mix the glaze ingredients together and spoon this over the top of the meatloaf.
    4. Cook on low for 6 hours (or according to manufacturers instructions). Serve warm from the-cooker with buttery jacket potatoes and braised red cabbage.
