Scrambled pancake (kaiserschmarren) recipe

These pancakes may be on trend, but kaiserschmarren (meaning Emperor’s mess) have been enjoyed in Austria since the days of Emperor Franz Joseph in the 19th century. Made with a classic batter that’s chopped into chunks during frying, these easy pancakes make a tasty one-pan breakfast. Serve with fruit and maple syrup, as we’ve done here, or a dusting of icing sugar and a tangy compote.

- 200g self-raising flour
- 2 tsp baking powder
- 200ml milk
- 2 eggs
- 10g butter
- 3 tbsp maple syrup
- fresh berries (optional)
- icing sugar (optional)

Method
- Whisk the flour and baking powder together to evenly combine. Make a well in the middle; pour in the milk, crack in the eggs and whisk until smooth. Set aside for 2-3 mins until the batter has visibly thickened and bubbles appear.
- Heat a large frying pan over a medium heat. Add the butter, swirling to coat the base and sides. Pour in half the batter to cover the base and cook, undisturbed, for 2-3 mins until golden, set on the bottom and a few bubbles start to appear on top. Flip over and cook for 1 min, then chop with the spatula into bite-size chunks, creating a scrambled effect. Cook, tossing the pan, for another 2-3 mins until no raw batter remains. Repeat with the remaining batter.
- Divide among plates, then drizzle with maple syrup. Scatter with fresh berries and dust with icing sugar, if you like, to serve.
- Tip: This is a great make-and-take meal to prep before a trip. Measure your dry ingredients and pop them all together into an airtight container to take with you. Unopened UHT milk can be kept at room temperature so is handy if you don’t have access to a fridge. Keep eggs and berries in a cool box.
