Roasted swede with thyme and hazelnuts

Ingredients

  • 1 large swede, cut into 4-5cm (2in) pieces
  • 30ml (2 tbsp) olive oil
  • 3 garlic cloves, whole and unpeeled
  • 1 tbsp thyme, chopped
  • 2 tbsp honey
  • 3 tbsp blanched hazelnuts, roughly chopped

Method

  1. Preheat the oven to Gas Mark 7, 220°C, fan 200°C. Arrange the swede cubes on a large baking tray, toss with the olive oil and season. Add the garlic and thyme and toss again. Roast for 30 minutes.
  2. Remove from the oven and toss with the honey and nuts. Return to the oven for another 8-10 minutes, until golden.
