A tasty twist on classic roast potatoes. Fragrant lemon and bay leaves add an exciting flavour that is really delicious when paired with roasted meats or a seafood main.

Ingredients

  • 750g waxy potatoes, such as Charlotte, sliced lengthways
  • ½ lemon, finely sliced
  • 3 fresh or dried bay leaves
  • 3 tbsp olive oil

Method

  1. Preheat the oven to gas 6, 200°C, fan 180°C.
  2. In a large bowl, toss the potatoes with the lemon, bay leaves olive oil and some seaoning. Spread the potatoes out on a baking sheet in a single layer. Roast for 30-35 mins, turning the potatoes halfway through cooking, until tender, golden and crisp at the edges.
