Ingredients

  • 200g pack purple sprouting broccoli
  • 30g unsalted butter
  • 2 garlic cloves, sliced
  • 2 tbsp roughly chopped flat-leaf parsley
  • 1 lemon, zested
  • a drizzle of olive oil

Method

  1. Bring a large pan of water to the boil and, once simmering, add the broccoli and cook for 3-4 mins until just tender. Drain and set aside.
  2. Melt the butter in a large frying pan over a medium-low heat and add the sliced garlic. Fry for 1-2 mins before adding the broccoli to the pan. Heat through, then remove the pan from the heat and stir through the parsley and lemon zest. Season to taste and serve with a drizzle of olive oil.
