Treat the kids to pizza for lunch - but a whole lot healthier! Make this pizza omelettes recipe for an easy lunch idea for kids - simply top omelettes with melting mozzarella, cherry tomatoes and basil for a healthy lunch with all the flavours of a classic pizza, ready in just 20 mins.

Ingredients

  • 8 eggs
  • 75g reduced fat mozzarella, torn into 2-3cm lengths
  • 10g fresh basil leaves, torn
  • 125g cherry tomatoes
  • 1 tbsp oil
  • 150g carrot sticks, to serve

Method

  1. Crack the eggs into a bowl and lightly beat with a fork. Add half the mozzarella, tomato and basil. Preheat the grill to high.
  2. Melt the butter in an ovenproof, non-stick 30cm frying pan over a medium-low heat. Pour in the egg mixture. After 2 mins of cooking, scatter over the remaining toppings and continue to cook for 3-4 mins until the edges of the omelette have set.
  3. Transfer to the grill for 3 mins until set and the mozzarella has melted and is beginning to brown. Slice and serve with the carrot sticks.
