Method

  1. Toast the cashews in an air-fryer at 180°C for 2-3 mins until golden. Transfer to a plate and leave to cool slightly.
  2. In the air-fryer basket (see tip), stir together the oil and onion. Air-fry at 180°C for 4-5 mins until slightly softened and lightly golden.
  3. Stir in the rice; cook for 1 min more. Stir in a third of the hot stock; cook for 5 mins. Add the remaining stock, stir well, then cook for another 30-35 mins until tender, stirring several times.
  4. Meanwhile, chop the cashews and boil the peas for 3 mins until tender; drain.
  5. Stir the peas, sliced mint and some seasoning into the risotto. Top with chopped cashews and remaining mint leaves to serve.
  • Tip: You need to be able to take the grill plate out of the air-fryer basket (most models allow this). If you can’t, fill the basket with a tight-fitting baking dish or silicone (not paper) liner.
