Shake up a classic cocktail at home with this simple passion fruit martini recipe. Gorgeous vanilla vodka balances the tangy fresh passion fruit and pineapple juice wonderfully. This simple recipe for one doesn't take long at all to prepare. Sit back, sip, and enjoy!

Ingredients

  • 50ml vanilla vodka
  • 15ml sugar syrup
  • 1 passion fruit, halved and pulp scooped out, plus extra ½ to garnish
  • 20ml pineapple juice
  • small handful of ice cubes
  • 25ml prosecco, chilled

Method

  1. Add the vodka, sugar syrup, passion fruit pulp, pineapple juice and ice to a cocktail shaker and shake vigorously for 30 secs. Strain into a cocktail glass and garnish with the passion fruit half and serve with a shot of prosecco on the side.
  2. This can be bought ready-made, but you can also make your own. Put 100g caster sugar in a pan with 50ml water. Heat gently until the sugar has dissolved, then bring to the boil, remove from the heat and allow to cool. Store in an airtight sterilised* jar or bottle. Will keep in the fridge for up to 3 weeks.
    • *To sterilise glass jars, wash in hot, soapy water and rinse well. Dry in the oven for 15-20 mins at gas 1, 140°C, fan 120°C until hot and completely dry. Boil metal lids and rubber seals for 10 mins, then leave to dry.
