Passion fruit glazed pork skewers recipe

Proving that passion fruit is not just for sweet dishes, these pork skewers are coated in a sweet, sticky glaze using fresh passion fruit, soy and a touch of chilli. Look out for wrinkly skins on the passion fruits as these will be the sweetest inside.

Ingredients
- 6 passion fruits, halved
- 35g soft light brown sugar
- 1 tbsp soy sauce
- 1 red chilli, deseeded and finely chopped
- 1 star anise
- 500g pork fillet
- 225g basmati rice
- 250g pack pak choi, each head halved lengthways

Method
- Soak 8 wooden skewers in cold water for 20 mins or use metal skewers. Scrape the pulp from 4 of the passion fruits into a medium saucepan with the sugar, soy, chilli, star anise and 50ml water. Stir over a medium heat until the sugar has dissolved, then reduce the heat and simmer for 15 mins, stirring often.
- Preheat the grill to high and line a baking tray with foil. Quarter the pork fillet lengthways, then cut into 32 even-sized chunks. Thread the pork onto the soaked skewers and arrange on the foil-lined baking tray.
- Spoon the passion fruit mixture over the pork and grill for 10-15 mins, turning occasionally and basting with the passion fruit glaze from the tray, until the pork is cooked through with no pink meat showing.
- Meanwhile, cook the rice following pack instructions and steam the pak choi for 5-6 mins until just tender. Serve the pork drizzled with the remaining passion fruit pulp and seeds, alongside the rice, pak choi and any remaining glaze from the tray.
