Ready in just 30 minutes, this gorgeous bhuna paneer is perfect for midweek or a Friday night fakeaway. Paneer is lighter than most cheeses and is great in rich tomato sauces. Give it a go!

Ingredients

  • 2 tbsp vegetable oil
  • 2 x 200g packs paneer, cut into 2cm cubes
  • 3 garlic cloves, chopped
  • 3cm piece ginger, peeled and grated
  • 1 onion, finely sliced​
  • 1 red pepper, cut into small chunks
  • 1 green pepper, cut into small chunks
  • ½ tsp ground turmeric
  • ½ tsp garam masala
  • 1 tsp hot chilli powder
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 400g tin chopped tomatoes
  • 15g fresh coriander, finely chopped
  • cooked brown rice (optional)
  • naan (optional)
  • lime pickle (optional)

Method

  1. Heat the oil in a lidded frying pan over a medium heat and fry the paneer, in batches if needed, for 1½ mins each side or until light golden. Transfer to a plate and set aside.
  2. Add the garlic and ginger to the pan, cook for 1 min, then add the onion and 1¼ tsp salt. Stir in the peppers and spices, cook for 2 mins, then add the tomatoes and 200ml water. Bring to a simmer, cover, then cook over a low heat for 10 mins, stirring occasionally, until thickened.
  3. Stir in the paneer, re-cover and cook for 2 mins. Scatter with the fresh coriander and remove from the heat. Serve with rice or naan and lime pickle, if you like.
