Traditionally made with almonds, this nut-free marzipan recipe is made with semolina and vanilla instead. It's the perfect substitute for sweet bakes, particularly at Christmas and Easter, for those with nut allergies

Ingredients

  • 200g (7oz) fine semolina or cornmeal
  • 200g icing sugar
  • 150g (5oz) softened butter
  • 2 tsp vanilla extract

Method

  1. In a mixer or by hand mix together all the ingredients, until it comes together. It is quite crumbly, so chill in the fridge for 15-20 mins to firm up before using.
  2. Use to cover the Nut-free Battenburg cake, or Nut-free Christmas cake.
