Chocolate mini rolls aren't just for kids – turn a packet into this easy cheat's tiramisu recipe for a simple yet elegant dessert. Coffee soaked mini rolls, soft mascarpone cream and a dusting of chocolate are sure to be a winner.

Ingredients

  • 70ml strong coffee
  • 250g mascarpone
  • 200ml double cream
  • 1 tsp vanilla extract (optional)
  • 4 mini rolls, each cut into 8 slices
  • 1 square dark chocolate, or cocoa powder, for dusting

Method

  1. Make up 70ml of strong coffee and allow to cool in a bowl.
  2. Mix the mascarpone and the double cream together until smooth. If adding the vanilla, mix it in now.
  3. Briefly dip 8 slices of mini roll in the coffee and arrange them in each glass, alternating with a spooned or piped layer of the mascarpone cream so that there are 4 layers in each glass.
  4. Place the tiramisu pots in the fridge until ready to serve.
  5. When ready to serve, grate a little dark chocolate over each glass or dust with cocoa powder.
  • Tip: For a boozy kick, try adding 2 tbsp dessert wine to the mascarpone mixture.
