Maple and cinnamon roasted chickpeas

A healthy alternative to roasted nuts, these roasted chickpeas are great to snack on whilst out and about.

Ingredients

  • 2 x 400g tins chickpeas
  • 1 tbsp olive oil
  • 4 tbsp maple syrup
  • 1 tsp ground cinnamon

Method

  1. Preheat the oven to gas 6, 200°C, fan 180°C. Drain and rinse thechickpeas. Dry in a tea towel, rubbing gently to remove the papery outer layer; discard.
  2. Tip intoa large, shallow tin and bake for 10 minutes. Remove from the oven and toss with theolive oil, maple syrup and ground cinnamon. Bake for 10-15 minutes more, or until golden. Turn of the oven, pull the door ajar and leave to cool for 15 minutes.
