Ingredients
- 350g spirali pasta
- 50g butter
- 50g plain flour
- 1 tsp smoked paprika
- 700ml semi-skimmed milk
- 175g extra-mature Cheddar, grated
- 100g grated mozzarella
For the topping
- 30g panko breadcrumbs
- 30g Parmesan, finely grated
- 90g Tesco Finest Spanish chorizo ring, grated

Method
- Preheat the oven to gas 6, 200°C, fan 180°C. Cook the pasta in a pan of boiling water for 2 mins less than the pack instructions. Drain, reserving a small mug of pasta water, and set aside.
- Meanwhile, melt the butter in a pan over a medium-high heat, then stir in the flour and paprika. Whisk to create a thick paste, then cook for 1 min, stirring. Season with black pepper and whisk in the milk, a little at a time, until you have a thick, smooth sauce. Take off the heat and mix in the cheeses, then stir until smooth.
- Stir in the cooked pasta along with a splash of the pasta water, then tip into a baking dish.
- Scatter the breadcrumbs, grated chorizo and Parmesan over the pasta. Bake for 20 mins until bubbling and golden on top. Serve with garlic bread and salad, if you like.
