We're all for viral storecupboard recipes when they're this quick, tasty and easy on the washing up. Cannellini beans are the star of this hearty dish, with plenty of fresh, fragrant flavour alongside earthy kale and zesty lemon for the perfect balance. Don't forget the flatbreads for mopping up all that flavour. A veggie dinner for two you'll be making on repeat.

Ingredients

  • 10g butter
  • 4 tsp olive oil
  • 1 small onion, fnely chopped
  • 1 garlic clove, crushed
  • 2 x 400g tins cannellini beans, drained and rinsed
  • ½ vegetable stock cube, made up to 300m
  • pinch of crushed chillies
  • 50g curly kale, stalks discarded
  • 25g pecorino, finely grated
  • 1 lemon, zested and juiced
  • 10g fresh flat-leaf parsley, leaves picked and finely chopped
  • 2 Tesco Finest flame baked flatbreads, warmed

Method

  1. Heat the butter and 2 tsp oil in a sauté pan and soften the onion over a low heat for 8 mins, stirring occasionally. Add the garlic and cook for 2 mins, then pour in the beans and stock; bring to a gentle bubble then cook for 10-12 mins until the beans are soft and the stock has reduced.
  2. Meanwhile, massage the remaining oil, crushed chillies and a pinch of salt into the kale, add to an air-fryer and cook at 180°C for 3 mins, shaking the drawer halfway, until crisp (or crisp in the oven at gas 6, 200°C, fan 180°C for 10-12 mins).
  3. Remove the pan from the heat, stir through the pecorino, lemon zest and juice. Season generously with black pepper. Stir the beans so that they break down a little, keeping some texture, then stir through the parsley. Pile the crispy kale on top and serve with warmed flatbreads for scooping.
