Keke fa’i (Banana cake)

    Ingredients

    • 1 banana loaf cake
    • 100ml double cream
    • 50g Tesco Finest Swiss dark chocolate 72%, broken into pieces
    • 40g (1 1/2oz) butter
    • 175g (6oz) icing sugar
    • 2 tsp cocoa powder
    • 2 tbsp milk

    Method

    1. Cut the cake through the middle horizontally.
    2. Whip the cream until it just starts to hold its shape but isn’t stiff. Spread on the bottom half of the cake and put the other half on top.
    3. To make the chocolate frosting, break the chocolate into pieces and melt in a bowl, over a pan of simmering water (the bowl must not touch the water). Remove and stir in the butter until melted. Sift the icing sugar and cocoa powder into a separate bowl. Add the melted chocolate and milk. Leave to thicken for about 20 mins.
    4. Spread the top of the cake with chocolate frosting and serve immediately or refrigerate.
