Hoisin salmon with rice recipe

Ingredients
- 4 x 130g skin-on salmon fillets
- 6 tbsp hoisin sauce
- 625g (or 5 large) pak choi, trimmed, white parts roughly sliced
- 6 spring onions, 4 roughly chopped, 2 finely sliced
- 2 x 250g Tesco Microwave Basmati rice pouches

Method
- Coat the salmon in 3 tbsp of hoisin sauce. Heat a large frying pan or wok over a medium heat and cook the salmon for 3 mins each side until just cooked through (add a splash of water if the salmon starts to catch). Remove to a plate and loosely cover with foil.
- Put the pak choi and chopped spring onions in the pan with ½ tbsp water and stir-fry for 2-3 mins until tender. Stir in the remaining hoisin sauce and another 2 tbsp water; bubble for 1-2 mins until the sauce thickens slightly.
- Cook the rice to pack instructions, then serve with the vegetables and salmon, with the sliced spring onions scattered over.
