Healthy berry crumble flapjacks recipe

These healthy flapjacks are sandwiched together with an extra fruity berry layer – perfect for snacking on the go or a tea-time treat. Stirring walnuts and oats into the crumble mixture adds extra crunch to these delicious bites.

Ingredients
- 225g rolled oats
- 100g wholemeal flour
- ½ tsp baking powder
- ¾ tsp salt
- 3 tbsp clear honey or 80g soft brown sugar
- 1 medium egg
- 80ml rapeseed or vegetable oil
- 30g walnuts or almonds, roughly chopped
For the berries
- 300g frozen mixed berries
- 1 tsp lemon juice
- 2 tbsp clear honey
- 1 tbsp wholemeal flour

Method
- Preheat the oven to gas 4, 180 ̊C, fan 160 ̊C and line a 20cm square tin with nonstick baking paper.
- Mix the oats, 100g flour, the baking powder and salt in a mixing bowl. In a separate bowl, whisk the honey or sugar, egg and oil, then pour over the dry ingredients and mix together with a wooden spoon. Transfer two-thirds of the mix to the prepared tin and press down firmly with the back of a spoon to give an even layer. Bake for 15 mins.
- Meanwhile, put the berries, lemon juice, honey and 1 tbsp flour in a small pan and simmer over a medium-low heat for 3-5 mins until thick and jammy.
- Spoon the berries over the baked oat base. Stir the nuts through the remaining oat mix, then scatter over the berries and bake for another 18-20 mins until golden. Leave to cool completely in the tin before cutting the flapjacks into 12.
