Garlic mushrooms and goat's cheese on toast

For a quick and easy dinner for two, try this tasty goat's cheese on toast dish, packed with herbs and topped with seasonal garlic mushrooms.

Ingredients

  • 25g butter
  • 2 garlic cloves, finely chopped
  • 200g portobello mushrooms, sliced
  • 1 tsp thyme leaves
  • 2 slices sourdough bread, lightly toasted
  • 75g (3oz) soft goat’s cheese
  • 4 tsp green pesto
  • green leaves, to serve (optional)

Method

  1. Melt the butter in a frying pan. Add the garlic and cook for a minute, until fragrant, then add the mushrooms, thyme and a little seasoning. Cook for 5-8 minutes, until the mushrooms have softened and any released juice has mostly bubbled away.
  2. Meanwhile, spread the toasted bread with the goat’s cheese. Divide the mushrooms between each slice and drizzle over the pesto. Serve with a handful green leaves, if you like.
