Frozen Pimm’s

Nothing says summer like a Pimm's, and our frosty take on the summer classic - with fresh fruit and ginger beer - is sure to be a refreshing, cool hit at any garden party.

Ingredients

  • 200ml (7fl oz) Pimm’s No. 1
  • 600ml (1pt) ginger beer or lemonade
  • 4 small strawberries, hulled and sliced or halved
  • 1 red apple, cored and thinly sliced
  • 4 slices cucumber, chopped
  • small handful fresh mint leaves, to decorate

Method

  1. Pour the Pimm’s and ginger beer or lemonade into a large freezer-proof container and freeze for 2 hours or until almost frozen.
  2. When you are ready to serve, scrape the Pimm’s mix with a fork to break up the ice crystals, then spoon into 4 glasses. Divide the fruit and cucumber between the glasses and decorate with mint to serve.
