DIY lunch tray

A perfect pick and mix lunchbox idea for kids, we love this mix of crunchy crudités, crackers and dip as a quick and easy packed lunch. You can let the kids choose their favourite veg or crackers, or vary the dip to suit their tastes.

Ingredients

  • 6 small crackers
  • 40g cucumber, sliced
  • 40g carrots, sliced
  • 40g mixed peppers, sliced
  • 40g reduced fat houmous (or tzatziki)

Method

  1. In a lunchbox, pack the crackers on one side and sliced cucumber, carrot and mixed peppers on the other.
  2. Create a divide between them with a strip of folded foil, if you like. Put the houmous (or tzatziki if your child has a sesame allergy) in a pot in the middle.
  • Cook's tip: You can also add a sweet snack, if you want to. Dip clementine segments in chocolate melted in a heatproof bowl over a pan of just simmering water. Place the segments on a lined tray; chill for at least 1 hr to set. Pack into a small container.
