Deep-dish tortilla recipe

This tasty tortilla makes a simple yet satisfying meal, and it’s high in protein too. Everything is cooked in the air-fryer to keep things easy. Served with a simple side salad for freshness, this Spanish omelette is ready in 35 minutes, plus a little cooling time. Easy to make and full of flavour, it’s sure to go down well with the whole family.

Ingredients
- 300g baby potatoes, cut into 1cm cubes
- 3 tsp vegetable oil
- 11 eggs
- 200g pack reduced-fat mozzarella, drained and torn
- 125g cherry tomatoes, halved
- 1 Little Gem, leaves separated
- ½ lemon, juiced

- Toss the potatoes with 2 tsp oil then spread in an even layer in an air-fryer basket (without the grill plate; see tip). Cook at 180°C for 10 mins, stirring halfway, until softened and starting to brown.
- Beat the eggs with some seasoning. Pour over the cooked potatoes. Dot over half the mozzarella and cook at 160°C for 7-8 mins until starting to set.
- Push the tomatoes gently into the top along with the remaining mozzarella. Continue to cook for 8-10 mins until set. Cool slightly, then lift out onto a board.
- Toss the lettuce with the lemon juice, remaining 1 tsp oil and some seasoning. Cut the tortilla into wedges and serve with the lettuce leaves on the side.
