Dark and stormy ice lollies recipe

Turn a classic cocktail into a refreshing summery treat with this ice lolly recipe. With spiced dark rum, fiery ginger beer and zingy lime, poured into lolly moulds and frozen for the perfect grown-up treat.

Ingredients
- 400ml ginger beer
- 100ml sugar syrup
- 2 limes, 1 juiced and 1 finely sliced
- 50ml dark rum

Method
- Put the ginger beer, sugar syrup and lime juice into a medium saucepan and bring to a simmer. Reduce the heat to low and heat gently for 2-3 mins until the mixture is no longer fizzing.
- Take the pan off the heat, stir in the rum and set aside to cool at room temperature. Put a slice of lime into each ice lolly mould and pour the mixture evenly into each one.
- You should get 6 lollies, leaving a 1cm gap at the top of each mould so the mixture can expand as it freezes. Freeze for at least 8 hrs or overnight.
