Cranberry sauce

A classic Christmas side – this super simple recipe gives perfectly sweet-sharp cranberry sauce with a glug of rich port. This must-have Christmas trimming pairs wonderfully with golden, roasted turkey.

Ingredients

  • 400g (13oz) fresh or frozen cranberries
  • 3-4 tbsp port
  • 2 Clementines, zested and juiced
  • 75g caster sugar

Method

  1. Put the cranberries, port and clementine zest and juice in a pan over a medium heat and bring to the boil. Reduce the heat and simmer for 5 mins, stirring, until the cranberries begin to soften.
  2. Stir in the sugar and spoon into a serving dish. Set aside to cool to room temperature.
