Cranberry and sloe gin sauce

This rich, fruity cranberry sauce is a luxurious blend of tart cranberries, sweet clementines, sticky marmalade and aromatic sloe gin. Quick and simple, this sauce is sure to be the perfect partner to your Christmas turkey. You can even get ahead by freezing the sauce up to a month in advance or chilling it for up to a few days.

Ingredients

  • 2 clementines, zested and juiced
  • 2 tbsp marmalade
  • 50g caster sugar
  • 3 tbsp sloe gin
  • 400g (13oz) cranberries

Method

  1. Heat the clementine zest, juice, marmalade, sugar and gin in a pan over a low heat, stirring until the sugar has dissolved.
  2. Add the berries and simmer for 8-10 minutes, until the fruit has softened and the sauce has thickened. Transfer to a bowl and leave to cool. Chill until ready to serve.
    • Freezing and defrosting guidelines

      Make according to the recipe and allow to cool completely. Put into a freezer-proof box and freeze for up to 1 month.

    • Leave to defrost at room temperature for several hours before serving.
