Ingredients

  • 175g plain flour
  • 25g cocoa powder
  • 1 tsp baking powder
  • 1 large egg, beaten
  • 250ml milk
  • butter or oil, for frying
  • 200g blueberries
  • golden syrup or maple syrup, for drizzling

Method

  1. In a bowl mix the plain flour, cocoa and baking powder. Make a well in the centre, add the egg and beat in, gradually adding the milk, until the mixture is smooth.
  2. Preheat the oven to gas 1/2, 130°C, fan 110°C. Heat a knob of butter or a little oil in a frying pan and blob in a heaped dessert spoonful of the batter, adding small blobs for ears on either side. Cook over a medium heat for a couple of minutes, until bubbles start to appear around the edges of the pancake, then flip over and cook for another couple of minutes, until puffed. Repeat with the rest of the batter, adding extra butter or oil between batches as needed.
  3. For the nose of each teddy bear, make a separate small blob of pancake, flipping as above. Keep the cooked pancakes warm in a low oven while you cook the remainder.
  4. Top each pancake with one of the small pancakes for a nose, two blueberries for the eyes and a drizzle of syrup.
