Once you try these sweet-spicy ribs, you’ll never want to eat corn on the cob any other way! Glazed with a spicy-sweet glaze and served with a creamy ranch dip plus plenty of zingy lime, the flavour combinations are pretty special. You can barbecue or bake the ribs, making them a versatile side for relaxed hosting or weekend feasting, whatever the weather.

Ingredients

  • 4 corn on the cob
  • 1 tbsp smoked paprika
  • 1 tsp onion granules
  • 2 tbsp vegetable oil
  • ½-1 tsp hot chilli powder (to taste)
  • 1½ tbsp maple syrup
  • 1 lime, zested and cut into wedges

For the ranch dip

  • 80ml soured cream
  • 30ml light mayonnaise
  • 30ml buttermilk
  • ½ tsp onion granules
  • ¼ tsp garlic granules
  • 2g fresh chives, finely chopped
  • 2g fresh dill, finely chopped
  • 1 tsp lemon or lime juice

Method

  1. Light a barbecue and wait until the flames have died down and the coals are glowing white.
  2. Meanwhile, whisk all the ranch dip ingredients together with a generous pinch of salt and pepper until well combined, then set aside.
  3. Trim the ends of the corn cobs for stability then, working one at a time, stand a sweetcorn cob on its end on a sturdy chopping board and very carefully cut right through the centre of the length using a sharp knife. Cut each half into two lengths. Repeat with the remaining sweetcorn, so you have 16 ‘ribs’.
  4. Toss the ribs with the paprika, onion granules and oil; season well. Barbecue, kernel-side down, for 8-10 mins until curled, charred and cooked through.
  5. Mix the chilli powder (to taste) and maple syrup together, then drizzle over the corn ribs and scatter with lime zest. Serve with lime wedges and the ranch dressing to dip into.
  • Tip: Not barbecuing? Preheat the oven to gas 9, 240°C, fan 220°C and bake the corn ribs for 20 mins until curled, lightly charred and cooked through.
