This fragrant South Asian rice dish is traditionally slow-cooked to allow the flavours to fully develop, but this shortcut recipe is perfect when you're short on time but craving a biryani. Using a flavour kit for ease and speed, everything is cooked in one pan on the hob. The result is a comforting dinner for two that's ready in just 25 minutes.

    Ingredients

    • 2 tbsp butter
    • 1 small red onion, sliced into half-moons
    • 1 pack Tesco Biryani Flavour Kit
    • 300g boneless chicken thighs, diced
    • 20g Greek-style yogurt
    • 1 basmati microwave rice pouch

    Method

    1. Heat the butter in a casserole dish over a low heat and fry the onion until golden.
    2. Add half the biryani seasoning from the flavour kit and fry for 1 min, then remove the onion from the pan and set aside.
    3. Add the diced chicken to the pan with the biryani paste from the flavour kit, along with the yogurt and the remaining biryani seasoning. Fry until the chicken is cooked through.
    4. Evenly cover the chicken with the rice and place a lid on top. Cook over a low heat for 10 mins.
    5. Carefully remove the lid and place the cooked onions on top. Mix well, then serve.
