Cheat's tortilla lasagne

There's just 30 minutes between you and this oh-so-easy lasagne recipe for two people. It's made with a homemade veg-packed beef ragu and shop-bought white sauce and tortillas for extra speed.

    Ingredients

    • 1 tsp vegetable oil
    • 250g 5% fat beef mince
    • 1 red onion, finely chopped
    • 1 carrot, peeled and finely chopped
    • 3 garlic cloves, finely chopped
    • 200g chopped tomatoes
    • ½ a 340g Tesco white lasagne sauce
    • 2 wholemeal tortilla wraps
    • 30g grated lighter mature Cheddar
    • 1 vine tomato, roughly chopped

    Method

    1. Preheat the grill to high. Heat the oil in a large frying pan over a high heat. Add the mince, onion, carrot and garlic and fry for 5 mins until the mince is cooked through and the veg is beginning to soften. Add the chopped tomatoes and bring to the boil.
    2. Meanwhile, tip the white sauce into a small saucepan over a medium heat, whisking continuously for 2-3 mins until thickened.
    3. Spoon half the mince into a small circular dish and top with 1 tortilla, followed by half the white sauce, the remaining mince, the second tortilla and the remaining white sauce. Finish with a sprinkle of cheese. Place directly under the grill for 5 mins or until golden and serve with the tomato on the side.
