Char siu pork

Indulgent pork belly is all the more delicious when marinated in a rich, sticky Chinese glaze. Preparing the meat the night before cooking lets all of the gorgeous flavours fuse together, so that all you have to do is simply grill, slice and enjoy. Give this classic Chinese recipe for moreish char siu pork a go, it's perfect as part of a Chinese feast.

    Ingredients

    • 2 tbsp hoisin sauce
    • 2 tsp Chinese five spice
    • ½ tsp paprika
    • 3 tbsp dark soy sauce
    • 1 tbsp light soy sauce
    • 1 tbsp rice wine
    • 1 tbsp tomato ketchup
    • 1 tbsp honey
    • 500g pork belly slices

    Method

    1. Mix all the ingredients, except the pork, in a small mixing bowl. Place the pork in a shallow dish. Pour over the marinade and mix well. Cover and refrigerate overnight.
    2. Preheat the grill to high. Remove the pork from the fridge, to bring to room temperature. Place on a lined grilling rack and cook for 4-5 mins on one side, until dark around the edges. Turn and cook for another 2-3 mins, until golden and cooked through.
    3. Transfer to a warm plate, cover with foil and rest for 5 mins. Slice and serve immediately.
