    Ingredients

    • 2 tbsp Cajun seasoning
    • 2 tbsp olive oil
    • 2 tbsp lime juice
    • 1 x 660g pack pork loin steaks

    For the sweetcorn salad

    • 2 x 325g tins sweetcorn, drained
    • a few cherry tomatoes, to garnish
    • 1 x 31g pack coriander, chopped
    • 1 red onion, chopped
    • 1 tbsp extra-virgin olive oil
    • 1 tsp chilli powder

    Method

    1. To make a marinade for the pork, combine the Cajun seasoning, olive oil and the lime juice in a bowl. Give everything a good stir until the mixture resembles a loose paste. Add the pork steaks and toss in the mixture until coated. Cover and chill until needed.
    2. Heat a griddle pan over a high heat. Cook the pork for 4–5 minutes each side, or until cooked through.
    3. To make the salad, put the sweetcorn, cherry tomatoes, coriander, red onion, extra-virgin olive oil and chilli powder in a bowl and toss to combine. Serve the sweetcorn salad with the hot pork steaks.
