Barbecued asparagus recipe

Cooking asparagus on the barbecue is an excellent way to bring out their nutty flavour. Lightly season with olive oil and salt, then char and dress with lemon juice and your choice of cheese.

- 20 asparagus spears, trimmed
- olive oil
- salt
- pepper
- juice of 1 lemon
- Manchego, feta or Parmesan cheese

Method
- Heat the barbecue until the coals are glowing and there are no flames or turn your gas barbecue to high.
- Roll theasparagusspears inolive oiland salt. Cook on the barbecue until slightly blackened and wilted – depending on the thickness of the spears, 5-10 minutes.
- Remove to a plate and drizzle withlemonjuice. Crumble or grate over your choice of cheese so that it melts a little on contact with the hot asparagus and forms a cheesy dressing.
