Ingredients
- 100g oats
- 1 ripe medium banana (85g), mashed
- 3 tbsp honey
- 2 tbsp coconut oil, melted butter or vegetable oil
- 25g plain flour
- 1 egg, separated
- 1 tsp vanilla extract

Method
- Preheat the oven to gas 4, 180ºC, fan 160ºC. Line 2 baking trays with baking parchment.
- Put the oats in a food processor with the banana, honey, coconut oil, flour, egg yolk and vanilla extract. Pulse until combined. Add 2-3 tbsp water if necessary – you’re looking for the mixture to hold its shape when pressed together.
- With damp hands, roll the mixture into 10 balls, then flatten slightly. Place on the lined trays and flatten again slightly with the back of a fork. Brush with the egg white. Bake for 15 mins until starting to turn golden round the edges. Allow to cool for 10 mins, then transfer to a wire rack to cool completely.
