Ingredients

  • 100g oats
  • 1 ripe medium banana (85g), mashed
  • 3 tbsp honey
  • 2 tbsp coconut oil, melted butter or vegetable oil
  • 25g plain flour
  • 1 egg, separated
  • 1 tsp vanilla extract

Method

  1. Preheat the oven to gas 4, 180ºC, fan 160ºC. Line 2 baking trays with baking parchment.
  2. Put the oats in a food processor with the banana, honey, coconut oil, flour, egg yolk and vanilla extract. Pulse until combined. Add 2-3 tbsp water if necessary – you’re looking for the mixture to hold its shape when pressed together.
  3. With damp hands, roll the mixture into 10 balls, then flatten slightly. Place on the lined trays and flatten again slightly with the back of a fork. Brush with the egg white. Bake for 15 mins until starting to turn golden round the edges. Allow to cool for 10 mins, then transfer to a wire rack to cool completely.
