Asian fish parcels recipe

This Asian-inspired recipe for flavourful fish parcels is as simple as it gets. Frozen hake fillets pair well with fresh pak choi and an edamame and vegetable stir fry mix under a fiery soy, chilli and ginger dressing.

Ingredients
- 320g pack edamame & Tenderstem broccoli stir fry
- 2 pak choi
- 4 frozen hake fillets
- 8 tbsp soy, chilli & ginger dressing
- 2 x packs microwaveable wholegrain rice

Method
- Preheat the oven to gas 6, 200°C, fan 180°C. Lay 4 large squares of foil on a work surface and top with 4 squares of baking paper. Divide the pack of stir fry mix between them.
- Add the pak choi, leaves separated and halved lengthways, and sprinkle each parcel with 1 tbsp water. Top with the frozen hake fillets and drizzle 1 tbsp dressing over each.
- Wrap up into parcels and transfer to a baking tray. Bake for 25-30 mins until the fish is cooked through. Meanwhile, heat the rice to pack instructions.
- Open the parcels and drizzle 1 tbsp dressing over each. Serve with the rice.
