Shopping list / Ingredients to buy:
250g beef mince
1 onion
1 red bell pepper
300g straight to wok udon noodles
2 eggs
Optional: Fresh coriander, finely sliced chillies and spring onions.
Method:
- Heat 1 tbsp of oil in a frying pan, finely dice and fry the onion and red bell pepper for 2 minutes.
- Add the beef mince and fry for 10 minutes, until browned and cooked through.
- Add the straight to wok udon noodles to the mince with 150ml water and seasoning paste, mix well, until evenly combined and cook for 2 minutes, or until noodles are cooked through.
- Once cooked pour the noodles in a bowl and heat 1 tbsp of oil and fry the eggs until the white is opaque and yolk is runny.
- Serve the noodles, top with fried egg, drizzle over the seasoning sauce and garnish (optional).
