Shopping list / Ingredients to buy:
2 chicken breasts
100g mushrooms
2 medium dried egg noodle nests
Fresh coriander
2 spring onions
Method:
1. Heat 1 tbsp of oil in a frying pan, cut chicken in bite-sized pieces and fry with sliced mushrooms for 5 minutes, until browned.
2. Add the seasoning powder and cook for 5 minutes, once cooked set chicken to one side.
3. Using the same pan, mix the seasoning paste with 800ml of boiling water, stir until dissolved.
4. Bring the ramen broth to a boil and add the noodles. Boil the noodles according to the packet instructions.
5. Divide broth and noodles into two bowls. Place the chicken and mushrooms on top, garnish with sliced spring onions and chopped coriander.
