Preparation and Usage

How to cook the perfect steakChef's tipsYou will need: A grill pan (ideally a cast iron skillet), a pair of tongs, a baking tray, olive oil and sea salt.Preparation is keyBring your steak to room temperature by taking it out of the fridge 1 hour before cooking. Place the melt to one side. Use a paper towel to pat your steak dry before seasoning.Oil your steak - not your panSeason with only sea salt (because pepper will burn) and be generous with the salt if you want a deliciously salty crust on your steak! Heat up your pan for around 5 minutes to ensure it is piping hot. You can check this by sprinkling a few drops of water - if the water dances around, the pan is ready!Succulent British sirloin steak matured for 30 days on the bone for an added depth of flavour. Finish with a Dijon infused smoky ranch melt.Tips for cooking the perfect steakSearing: Make sure you allow the steak to build up a nice seared crust on a high heat before flipping, and don't forget to sear the edges! If there is a thick layer of fat on the edge of your steak, hold it up vertically to brown the fat. Once seared on both sides and all edges, transfer to a pre-heated oven and add the melt for the last 4 minutes of cooking time.Checking: If you have a temperature probe, follow the internal temperatures below to cook the steak based on your preference. We recommend cooking our steaks to medium-rare (medium-rare: 55°C-60°C, medium: 60°C-65°C, medium-well: 65°C-70°C)Perfect to finish on the BBQFor a chargrilled barbecue effect, cook as per the cooking instructions above, then place on the barbecue, brush with the excess juices and turn frequently until desired chargrilled appearance is achieved.Plating up like a proResting: Before plating your steak, ensure it's well-rested for at least 10 minutes and ideally on a warm plate or baking tray. Avoid resting on the pan as this may over-cook the steak.Carving: Carve the meat off the bone first by running a sharp knife between the meat and the bone. Next, identify the direction of the grain, which are the parallel fibres running through the meat, and cut against the grain into slices with a thickness of your liking.

Suitable for freezing. Ideally freeze as soon as possible after purchase but always by 'use by' date shown. Follow the preparation guidelines above. Once defrosted use within 24 hours and do not refreeze. Defrost thoroughly for a minimum of 12 hours in the fridge. Not suitable for cooking from frozen. Keep refrigerated. Once opened, consume within 1 day and by ‘use by’ date shown.

Cooking Instructions

Instructions: Remove all packaging and place melt to one side. Allow steak to rest at room temperature for 1 hour before cooking.CautionAlways wash hands, surfaces and utensils after contact with raw meat.ImportantNot suitable for microwave cooking. Not suitable for cooking from frozen. All appliances vary, these are guidelines only. If cooked rare there is a small risk that harmful bacteria may be present. Tesco recommends that meat products are cooked thoroughly.

Shallow Fry

Instructions: Rub or brush the steak with a little oil and season with sea salt. Heat a heavy based frying pan over a high heat for 2-5 minutes until hot. Place steak in the dry pan and cook over a high heat.2 mins each side plus 30 secs for each steak edge

Oven cook

Instructions: After pan frying transfer the steak to a pre-heated roasting tray and place in the centre of a pre-heated oven. Cook for a further:200°C/Fan 180°C/Gas 63 mins per 100g (rare)4 mins per 100g (medium)7 mins per 100g (well done)Remove from the oven. Place the melt on top of the steak for the last 4 minutes of cooking. Remove from the oven and allow to rest for 10 minutes in a warm place before serving. These instructions are given as a guideline only as steak thickness will vary slightly.
