Description

White WineThe Nicole vineyard is composed of clay and chalk soils with fossils, and enjoys a unique microclimate. Planted on hilly slopes, our viognier grapes are perfectly placed to produce a rich, fresh and aromatic wine, whose floral and peach flavours stand out wonderfully well.
Paul Mas reserve single vineyard collection wines come from Jean-Claude mas' vineyards in the Languedoc region in the heart of the South of France.

Vinification Details

De-stemming, skin maceration for 4 hours from the grapes of our oldest vines, settling at low temperature at 10°C. Fermentation lasts 4 weeks, at controlled temperature (18°C max). Malolactic fermentation for 20% of the wine. 15% of Viognier finishes its fermentation in new oak barrels. Ageing: 15% of the Viognier finishes its fermentation in new oak barrels, followed by 3 months' ageing. The rest is aged in stainless steel vats until blending.
