Preparation and Usage

  • You will need:
  • 100g soft unsalted butter
  • 2 medium eggs (beaten)
  • 60ml milk
  • 1 large cooking apple (peeled, cored, and thinly sliced)
  • Demerara sugar to sprinkle on top
  • 20 x 25cm lined tin
  • Paul's Top Tips
  • To customise: Why not add a handful of sultanas to the mix to make the cake extra especial and fruity?
  • Before Baking: leave the traybake to one side for 10 to 15 mins to get the best rise.
  • Apples: Any apples can be used. Cooking apples give a tartness and add moisture to the cake, while eating apples are a lot sweeter.
  • To serve: Serve with a dollop of clotted cream.
  • 1 Preheat the oven to (190°C / 170°C Fan / Gas Mark 5) and line a tin with non-stick baking paper. Place the entire mix into a bowl, then rub the butter into the mix to give a breadcrumb-like texture.
  • 2 Next stir in the beaten eggs and milk with a spatula until well combined and gently stir in the sliced cooking apple.
  • 3 Pour the mixture into the tin and gently smooth to level. Sprinkle the demerara evenly on top of the cake mix.
  • 4 Bake on the middle shelf of the oven for 25-30 minutes until golden and a skewer inserted into the middle comes out clean. Allow to cool in the tin before cutting into squares.
  • And there you have it - A delicious Traditional Dorset Apple Cake!
