Baked eggs and beans

  1. Heat 1 tbsp oil in a large frying pan over a medium heat
  2. Add 2 finely sliced red onions and 2 sliced peppers; season
  3. Fry for 5 mins, stirring occasionally
  4. Finely chop 1 large garlic clove; stir in and cook for 2 mins more
  5. Add 400g tin chopped tomatoes, half-fill the tin with water and add to the pan
  6. Cook for 5 mins, then stir in 1½ x 420g tins of baked beans and cook for 5 mins more
  7. Stir in 125g baby spinach. Make 4 hollows and crack the eggs into them
  8. Cook for 4-5 mins or until the whites have just set
  9. Serve with a drizzle of hot sauce and crusty bread, if you like
