Regional Information

A vast amphitheater facing the Mediterranean, Languedoc-Roussillon is the largest wine-growing region in France. Blessed with a sunny climate, its mosaic of terroirs—schist, limestone, pebbles—produces an immense diversity of wines. After a remarkable qualitative renaissance, the region combines the structure of its AOCs with the creative freedom of its IGPs. Emblematic grape varieties such as Syrah, Grenache, and Mourvèdre produce generous reds and rosés, while the whites are becoming more refined.

Vinification Details

Carignan: carbonic maceration for approximately 12 days; Grenache/Syrah: traditional fermentation of destemmed grapes with temperature control and daily délestage for better polyphenol extraction.

History

Fitou, the oldest appellation in Languedoc, is located in the south of France, between Narbonne and Perpignan, in the Aude department. The vineyards stretch between the Mediterranean Sea and Corbières, on steep hillsides, with a hot, dry, and windy climate typical of the south. Fitou is located on varied terroirs, including schists, limestones and clay-limestones, as well as metamorphic rocks.
