Preparation and Usage

Allow the meat to rest at room temperature for 30 minutes before cooking.

Oven

Instructions: Oven 220°C/ Fan 200°C/ Gas 7 Season the joint with salt and pepper and place it in a deep roasting tin on a trivet of vegetables or a metal rack and put in the centre of a pre-heated oven for 20 minutes. Ensure the beef is fat side up. Reduce heat to 200°C/ Fan 180°C/ Gas 6 and calculate the additional cooking time at 3 minutes per 100g for medium - rare, 3 minutes 30 seconds per 100g for medium or 5 minutes per 100g for well done. Allow joint to rest in a warm place for 20 minutes before serving. Remove strings prior to serving.

Instructions: Use your roasted vegetables to make a rich accompanying gravy.

Storage

Suitable for freezing. Ideally freeze as soon as possible after purchase but always by 'use by' date shown. Defrost thoroughly for a minimum of 24 hours in the fridge. Once defrosted use within 24 hours and do not refreeze. Follow the preparation guidelines above. Keep refrigerated. Once opened, consume within 1 day and by ‘use by’ date shown.
