Red WineThe wine shows a deep red colour; the nose is elegant and warm, showing strong flavours of blackberries and cherries, on a bed of vanilla notes, slightly spiced. In the mouth, the wine is rich and soft, with liquorice notes coming out.
Domaines Paul Mas is one of France's largest privately owned wineries, owned by the founder and winemaker Jean-Claude Mas. Jean-Claude Mas is the fourth generation grower but first generation winemaker. Jean-Claude inherited only a 35h vineyard in 1999, established Domaines Paul Mas in 2000 and we now have 17 estates across the Languedoc covering 940ha of own vineyards. The key to the success is mainly down to Jean-Claude's close attention to all the "5 know-hows" including Viticulture, Vinification, Ageing & Blending, Bottling and Marketing. Whilst mastering all five steps in detail, with the "Luxe Rural" or "Everyday Luxury" philosophy in mind we craft great and affordable wines that stimulate real emotions. Regional Information

Soil: clay and Limestone with gravel, as well as some schist soils especially where the Carignan is grown. Age of the vineyard: 11 to 23 years old. Pruning: Cordon de Royat. Density of planting: 4400 plants/ha. Harvest: mechanical at night. Average yield: 40 hl/ha. Climate: Mediterranean.

Vinification Details

Careful selection of the best grapes after a mechanical harvest at night to avoid oxidation and preserve the maximum fruit expression. After destemming of the harvest, each grape variety is vinified separately. Fermentation at 25°C. 8 to 12 days skin contacts for the Carignan and Syrah, 10 to 18 days for the Grenache. We only use the free run juice and the first press. This process is geared towards a maximum fruit aromas and softness preservation. Blending is done in November.
